The Forest Honey is made from the nectar of flowers of fruit trees and forest herbs. Its unique slightly bitter taste can be explained by the variety of honey plants and the increased content of honeydew, in comparison to all of the other varieties. The shade of honey can vary from light yellow to dark brown, almost black.
