Tsar Paskha Easter cake (raw) Recipe:
- 2.2 lb (1 kg) cottage cheese
- 7 oz (200 gr) butter
- 1.1 lb (500 gr) sugar
- 10.6 oz (300 gr) heavy cream (at least 30% milk fat)
- 5-6 egg yolks
- 3.5 oz (100 gr) raisins
- 3.5 oz (100 gr) almonds
- 3.5 oz (100 gr) candied oranges
- 1 pinch of cardamom
- ½ teaspoon of vanilla sugar
- 1 Easter cake mold
1. Mash butter with sugar until white, adding yolks, one by one. Sugar must be mashed in thoroughly, to dissolve completely. Add vanilla sugar. Whip heavy cream to stable foam (this is best done by putting the container with heavy cream on ice or in very cold water).
2. Rub cottage cheese through a sieve and mix with butter and sugar paste.
3. Add chopped almonds, raisins and candied oranges (cut the candied orange pieces in half if they are too large).
4. Thoroughly mix everything, adding whipped heavy cream, and fill it into the cake mold, lined with cotton cheesecloth or cotton fabric. Store in the refrigerator for 12 hours.
