For meat/For fish/For cheese/For lard. Alder has the maximum bactericidal property. Alder smoke is softer than it might seem at first glance. Despite the fact that alder chips are considered universal, they are recommended for smoking fish. It gives the food a soft taste, tart aroma, golden or dark yellow colour. But it also goes well with vegetables, poultry, beef, pork and game.
Method of application:
- Before use, soak the wood chips for 20-30 minutes.
- Allow the water to drain.
- Put the wood chips in an even layer at the bottom of the smokebox.
- The whole smoking process depends on the size of the products
- It is used with other breeds to give the product an exquisite colour, taste and aroma
- Experts recommend using 30% fruit and berry trees wood chips and 70% alder wood chips
